Patio Gardens is offering this 4-part Rustic Italian Series workshops to be taken together or as individual classes. BONUS: Register for all 4 classes and receive a $50 gift card (provided in your first class). 


Rustic Italian foods embrace traditional country side cooking that uses fresh, local, simple and seasonal ingredients to create hearty and delicious dishes.
An unpretentious presentation of humble ingredients that celebrates family style rather than plated meals.

Rustic Gnocchi Workshop - Tuesday Oct. 20th at 6pm
Participants in this workshop will be introduced to the homemade Italian pasta dumpling.
Gnocchi is a dish created from a mixture of potato, flour, egg and sometimes grated cheese and turned into a soft small dumplings of pasta dough.
The class will include demonstrations, discussion, hands on opportunity and tasting. Participants of this will learn how to make their own gnocchi.

Rustic Polenta Workshop - Thursday Oct. 22nd at 6pm
Participants in this workshop will learn how to prepare the cornmeal in a variety of ways into the polenta dishes.
Polenta is a traditional dish made from stone milled corn added with other ingredients and cooked into a delicious and satisfying dish. While a humble ingredient, cornmeal is used in both savoury and sweet recipes from appetizers to desserts.
The class will include demonstrations, discussions, and tasting of savoury and sweet creations.

Rustic Pasta Workshop - Tuesday Oct. 27th at 6pm
The heart of the rustic Italian kitchen is pasta. Pasta expresses satisfaction in a dish created from flour, eggs, salt, olive oil and water.
Every Italian region, each community and household celebrate their unique creations while all using similar Ingredients. Participants will learn how to make their pasta from these simple ingredients through demonstrations, discussions, hands on and tasting opportunities. 

Rustic Focaccia Workshop - Thursday Oct. 29th at 6pm
This versatile flatbread has a delicious golden crispy crust and soft airy inside.
Participants in this class will learn how to prepare the dough, understand the yeast fermentation and gluten development, proofing, cooking and storage methods.
Focaccia can be served as stand alone or accompanying a meal. The ability to be savoury or sweet makes it a favourite choice in rustic Italian cooking.
The workshop provides participants with demonstrations, discussion and hands on experiences.

 

Duration: Each class is approximately 90 minutes.

Partnered with Saanichton Farms to supply locally grown and processed flours.

 

Please note that this is a demonstrative workshop with an interactive component. Examples of food at various stages of preparation and cooking will be provided for demonstration purposes. Food prepared during the workshop is not intended for consumption. Any food provided for consumption is prepared separately off site.
